Traditional wines the organic way

“People who come from South Tyrol usually return at some point. It was no different for me. I love the land and the people. And our local wines.”

Agriculture in our part of South Tyrol is almost always synonymous with wine growing. The region has many self-made wineries, wine estates and cooperatives.
In 2011 we decided to switch from farming to wine growing at the Rynnhof, and right away we knew that we would be guided by biological and organic principles. We converted production slowly but steadily, and now the fruit from our apple trees and berry bushes is only available for our family and guests. Our vision for our wine has always been classic and authentic, but with a touch of originality.
The only form of agriculture we considered is organic farming; this is an investment in the future. We spend a great deal of time in the vineyards and we want to continue living and working in a healthy, unblemished natural environment.
We focus on the four South Tyrolean classics: Pinot Blanc, Gewürztraminer, Schiava (Vernatsch) and Lagrein. Depending on the quality and quantity of the grapes in a given year we sometimes try something new, like a cuvée, a rosé or a riserva.
Our favourite time in the vineyards is when the plants are growing and everything is blossoming and budding to the sound of buzzing and beating wings. It is very important for us to live peacefully and mindfully, in harmony with nature: that’s why we grow our grapes using organic methods. In 2018 we launched the first certified organic Rynnhof wine.

Winemaking process

We start the manual harvest of our white wine grapes early in the morning. Then we quickly bring the cool Gewürztraminer grapes to the cellar, where they are macerated for around 8 hours in an oxygen-free environment and then gently pressed. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature. Ageing also takes place in stainless steel tanks, without malolactic fermentation.

Tasting notes

Our Gewürztraminer is an aromatically fruity white wine, with an unmistakable aroma of tropical fruits as well as roses and cloves, cinnamon and nutmeg. In the glass it has a delicate golden yellow colour. It is complex on the palate with a long finish.

Food pairings

Gewürztraminer goes very well with shellfish, spicy meat dishes, mature cheeses and Far Eastern cuisine.

Winemaking process

We harvest our red wine grapes by hand. They are then de-stemmed (the berries are removed from the stalks) and go into stainless-steel tanks where the mash can ferment. We age the wine in oak barrels for 12 months, than in steel tanks for at least 16 more months.

Tasting notes

Lagrein is a strong, fruity red wine with a ruby to dark garnet colour. Its aroma has notes of ripe blackberries but also violets, with fine spicy notes of dark chocolate and tobacco. It has a velvety palate with a lightly astringent finish.

Food pairings

Lagrein pairs well with hearty game dishes, red meat and hard cheeses.

Rosé

Winemaking process

The grapes of the individual varieties are harvested separately. They are then de-stemmed (the berries are removed from the stalks), and once the grape skins have been macerated for a few hours, they are gently pressed. Fermentation takes place at a controlled temperature in stainless steel tanks. The wines are blended before bottling.

Tasting notes

Our Rosé is a fresh, fruity wine with a coral red colour. It has aromas of raspberry and gooseberry, rhubarb and a delicate almond finish.

Food pairings

Our rosé is an excellent aperitif and pairs well with starters, smoked fish and white meat.

Rynn

Winemaking process

The grapes of both varieties are harvested separately and then de-stemmed (the berries are removed from the stalks) and fermented at a controlled temperature. Fermentation and malolactic fermentation take place in stainless steel tanks. The wines are aged separately in large oak barrels as well as in small wooden barrels. Before bottling we blend the two wines.

Tasting notes

Our Rynn is a robust, smooth red wine with a ruby colour. It exudes aromas of ripe berries and plums with fine hints of spice.

Food pairings

This wine goes perfectly with grilled meats, game and mature cheeses.

Schiava

Tasting notes

Our Schiava is a light, low-tannin wine with a light ruby to ruby red colour. It tastes pleasantly mild and fruity, with a light aroma of bitter almond and cherry.

Food pairings

Schiava is a classic South Tyrolean wine often enjoyed with food. It goes well with many traditional dishes and also with a typical snack of bacon, sausage and cheese.

Winemaking process

We start the manual harvest of our white wine grapes early in the morning. Then we quickly bring the cool grapes to the cellar, where they are gently pressed. The vinification process takes place partly in stainless steel tanks and partly in small wooden barrels.

Tasting notes

Our Pinot Blanc is a fine, fruity and fresh white wine with a pleasant minerality. Its aroma of green apple and citrus fruits is accompanied by gentle vanilla tones. This is also reflected in its pale straw-yellow colour with light greenish reflections.

Food pairings

Our Pinot Blanc goes well with light starters, fish dishes and light white meat dishes, and also makes an excellent aperitif.
